Black Bean Brownie Recipe

 
 

One of our staff member swears by this yummy brownie as an almost daily dietary staple. If you break down the ingredients list, it’s pretty much as healthy for you as making a really big banana, date and cacao smoothie for breakfast, and you add a tin of black beans as well which adds low fat, low GI protein. It's also gluten free, dairy free and vegan!

Add the fact that you are eating only one or two pieces at a time *ahem* and there really should be no guilt when consuming this, whether for breakfast, lunch, dinner, dessert or just as a good old-fashioned snack.

This recipe is from Jessica Prescott, author of 'Vegan Goodness'. Her recipes are healthy, delicious and totally do-able!

INGREDIENTS

3 spotty bananas, peeled

1 tin (1 1/2 cups) black beans

6 medjool dates, stones removed

125g (1 cup) cacao powder

60g (1/2 cup) buckwheat flour

2 teaspoons baking powder

50ml (1/4 cup) coconut or olive oil

50ml (1/4 cup) nut milk, water, orange juice or espresso

1 teaspoon natural vanilla extract

1/2 teaspoon salt

large handful pecans, walnuts or vegan chocolate chips

FOR THE TOPPING

chopped pistachios or other nuts, (optional)

sea salt flakes, to garnish

edible flower petals of your choice, to decorate

METHOD

  1. Preheat the oven to 180°C and line a brownie tray (or casserole dish) with baking parchment.

  2. Place everything, except the nuts, in your food processor and blend until smooth, scraping down the sides of the food processor as necessary. Roughly chop the nuts, add to the food processor and blend just to combine (you still want the nuts to be chunky).

  3. Pour the mixture into your lined brownie tray, making sure you get all of the mix from under the blade of the food processor. Smooth down the mixture using the back of a spoon, then lick the spoon clean! Sprinkle the chopped pistachios, if using, and salt flakes on top.

  4. Bake for 30 minutes. Allow to cool before cutting and eating (if you can). For that extra wow-factor, sprinkle over some edible flower petals.
